Happy Fourth of July Blueberry Pie

Happy 4th of July!

This holiday always has me thinking about creative red, white, and blue desserts. And yes, 4th of July blueberry pie is often the sweet that comes to mind! If you’ve got a BBQ to attend and need a fun festive desert, feel free to try out this this tasty star-tastic treat:

Fourth of July Blueberry Pie

Crust Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup and 2 tablespoons cold unsalted butter (cut into small pieces)
  • ¼ to ½ cup ice water

Pie Ingredients:

  • 6 cups of blueberries
  • 1/2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/4 cup flour
  • 1/2 cup sugar
  • 1/4 tsp cinnamon
  • 2 tbsp butter (cut in pieces)
  • 1 egg
  • 1 tbsp milk

Making the Crust:

1. Pulse flour, salt, and sugar in a food processor to combine. Add butter and pulse until mixture resembles coarse crumbs.
2. Evenly drizzle ¼ cup ice water over mixture. Pulse until mixture just begins to hold together (it should not be wet or sticky in texture). If too dry, add more water one tablespoon at a time.
3. Divide dough in half. Wrap each half in plastic and shape into a disk.
4. Refrigerate for 1 hour, or up to overnight.

Making the Pie:

1. Mix berries, sugar, flour, cinnamon, zest, and lemon juice in a large bowl.
2. Put pie crust in bottom of pie pan, then fill with berry mixture and dot with butter.
3. Cover with second crust. To make it star-tacular, cut stars out of the crust with a star-shaped cookie cutter. Adorn crust with star shapes you’ve cut out.
4. Chill pie for 30 min.
5.  While pie is chilling pre-heat oven to 425 degrees.
6. Whisk egg and milk together and glaze the top of the pie.
7.  Bake pie for 20 min at 425 degrees. Then turn temperature down to 350 degrees and continue to bake for another 30 to 40 minutes.
8.  Eat!!!
